Honestly, leftovers might be my favorite part of any big meal-I sometimes think they're even better than the first round. No rushing around the kitchen, no stress, just reheating good food, putting your feet up, and enjoying it at your own pace.

What This Recipe Needs:
Bread- Any will do, but I like to use a thick brioche, Texas toast, or a slice of my no-knead artisan bread if I have it!
Turkey- use up your leftover smoked spatchcock turkey, herb butter turkey, or sliced deli turkey meat if you have that.
Cheese- I love using Brie for these sandwiches (use up leftover Brie in my Brie and Prosciutto Salad or Brie and Bacon Grilled Cheese!), but you can use any cheese of your liking. Provolone, jack, or mozzarella would be tasty, but a Gouda would be amazing.
Gravy- Whip up a batch of my homemade turkey gravy without drippings in less than 5 minutes- you will want to pour it on everything!

How to Make an Open-Faced Hot Turkey Sandwich with Gravy:

- Step 1: Toast your bread. I like to do this in the oven with it set to broil. Just be careful to oversee the bread so it doesn't burn. (Check out my article on How to Toast Bread in the Oven!)

- Step 2: Once toasted, assemble your sandwiches with turkey and cheese, and any other desired toppings. Then, broil again until the cheese is melted.

- Step 3: Pour warm gravy over both halves and enjoy!
Alternative Cooking Methods:
If you'd rather skip the oven, toast your bread in a toaster, layer on the turkey, and spoon over the gravy. Pop it in the microwave until hot-it may be a little soft, but it's still delicious.
You can also heat the gravy in a saucepan, then spoon it over the toasted bread and cheese.

Ingredients
- 2 slices bread
- 4 large slices of turkey
- 2 oz cheese brie or provolone
- Gravy
- Chives or Parsley Garnish, optional
Instructions
- Preheat your oven to broil on high and line a baking sheet with parchment paper.
- Place your bread on the prepared baking sheet and broil until toasted. 1-2 minutes per side. Watch the bread carefully so it doesn't burn.2 slices bread
- Once toasted, top with turkey and cheese and return to the oven. Broil until cheese is melted, another 1-2 minutes. Watch carefully so your cheese doesn't burn.4 large slices of turkey, 2 oz cheese

- I can't say this enough- watch the food when you are broiling it. It can go from tasted to burned in seconds.
