Crispy Potatoes are such a tasty treat! They are the perfect side dish, that is easy to make with very little work!
From mashed potatoes, french fries, sweet potato skillets, and even potato tacos and rolls, I love all things potatoes. Boil’em, mash ‘em, and stick them in a stew- any way to cook a potato and I am there!
These crispy smashed potatoes are a favorite of my family and every time I make them there are never any leftovers!
What you need for crispy smashed potatoes:
Small Potatoes- I like to use the red but yellow work too.
Salt- for seasoning and for boiling.
Bacon Butter- I used Good Rancher’s Bacon Butter which is actually like a slightly sweet bacon jam. It’s incredible flavorful and delicious. If you don’t have any, simply omit from the recipe- just the regular butter and oil will make these potatoes crispy and delicious too!
Olive Oil- Just a little to help with extra crispiness.
Seasoning: Salt, Pepper, Red Chile Flakes
Optional Garnish: Chopped Parsley

How to make crispy potatoes?
- Boil water with salt. Then add the potatoes and cook until they can be pierced with a fork.
- Once cooked, remove from water and let cool for 5-10 minutes.
- Place potatoes on a parchment lined baking sheet and smash! The thinner the potatoes the crispier.
- Drizzle with melted butter and bacon butter, then drizzle with the olive oil. Sprinkle with salt, pepper, and red pepper flakes.
- Bake for ~40-50 minutes. The potatoes are done when they are golden and crispy!
- Once cooked, sprinkle with chopped parsley for an extra pop of flavor and color!

What if potatoes aren't crisp after baking?
If the potatoes aren't crisp then keep baking them for another 5-15 minutes, checking periodically so they don't burn. Remember, if they weren't smashed thin they won't crisp up as much as if they were.
How to store leftover crispy potatoes?
Store leftovers in an airtight container in the refrigerator.
How to reheat crispy potatoes?
Reheat by placing potatoes in a single layer on a baking sheet in the oven at 400°F for 5-10 minutes. This is the tastiest way to reheat and to get them to crisp back up.
Crispy Potato Substitutions and Variations
Potatoes: Use Medium sized potatoes, these tend to be a bit thicker and result in a slightly fluffier end result. Still delicious though!
Bacon Butter/Jam: If you don’t have bacon butter you can omit from the recipe all together with no other substitutions need. Alternatively, you could sprinkle some cooked bacon bits on the potatoes too if you really want a little bacon flavor!
Herb Butter: Adding garlic, thyme, or rosemary sounds tasty but can cause them to burn when cooked. You can add chopped thyme and rosemary instead of parsley, as a garnish, or melt the regular butter over low heat and simmer with garlic, thyme, and rosemary then strain those out- but that’s a lot of work when sprinkling them on after baking is just as tasty.
Seasoning: These potatoes taste great with added garlic powder, paprika, and even a little chile powder. Just depends on the flavors you are going for!
Cheese: During the last 5 minutes of the bake sprinkle potatoes with parmesan or mozzarella for a tasty treat. Parmesan will crisp up but mozzarella will get nice and gooey- both are delicious!

Crispy Potatoes with Bacon Butter
Ingredients
- 1-1 ½ lbs small potatoes red or yellow
- 1 tbs salt for boiling
- 2 tbs Good Ranchers Bacon Butter* melted
- 2 tbs butter melted
- 1 tbs olive oil
- 1 teaspoon salt
- ½ teaspoon red pepper flakes optional for a little heat
- ¼ teaspoon pepper
- Garnish Chopped Parsley optional
Instructions
- Fill a medium sized pot with water, add 1 tbs salt and bring to a boil. Once boiling add potatoes and cook until soft and they can easily be pierced with a fork. This takes ~20-30 minutes. *1-1 ½ lbs small potatoes, 1 tbs salt
- Once cooked, drain the potatoes and let them sit for 5-10 minutes to be cool enough to work with.
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Once the potatoes have cooled a bit, place on prepared baking sheet and smash. You can use a potato masher or the bottom of a sturdy cup. Mash them fairly thin so that they will get crispy.
- Once mashed allow them to sit for 5 more minutes to help release the steam- this will get them even more crispy.
- While letting them rest, melt your bacon butter and regular butter. Then drizzle the potatoes with the butter mixture and then the olive oil.* Sprinkle potatoes with salt, pepper, and red pepper flakes.2 tbs Good Ranchers Bacon Butter*, 2 tbs butter, 1 tbs olive oil, 1 teaspoon salt, ½ teaspoon red pepper flakes, ¼ teaspoon pepper
- Bake potatoes for 45-50 minutes until golden brown and crispy. Don’t flip or turn the potatoes. You want them crispy but not burnt, so bake them as long as you need to without burning them. Once crispy and done baking, sprinkle with chopped parsley and enjoy!
Notes
- *If you don’t have bacon butter/jam, simply omit from the recipe. They will be tasty and crispy with just the oil and butter.
- *Potatoes will take a little longer to boil if you are at altitude (like me!). Start checking them with a fork around 25 minutes and them every 5 minutes after.
- Using both butter and olive oil helps to crisp the potatoes and adds a depth of flavor.
- Leftovers: Store leftovers in an airtight container in the refrigerator and eat within a 2-4 days.
- Reheat by placing on a baking sheet in the oven at 400°F for 5-10 minutes. This is the tastiest way to reheat and get them to crisp back up.
