Learning how to freeze corn is easy and takes no time at all! Corn can be frozen on the cob or as kernels and here you will learn all the tips and tricks!
Corn is a delicious addition to any dinner. Whether it’s grilled up with some chicken or burgers, served as tasty side for Thanksgiving, or used in baked goods, corn is a favorite side for many dishes!
During the summer months you can find lots of corn for next to nothing at the stores or at road side stands. When there is an abundance, I like to buy a little extra to freeze for the winter.
What you need to freeze corn:
For Whole/Halved Corn on the Cob
- Whole Ears of Corn
- Large Pot
- Ice
- Baking Sheet
- Plastic Wrap
- Freezer Bags

How to freeze corn on the cob?
- Remove the husks and silks from the corn. Cut cob in half for smaller portions.
- Bring water to boil in a large pot, then add the corn and boil for 3 minutes, turning the corn every now and then.
- Remove corn from water and place directly on ice. I like to put the ice on a baking sheet then place the corn on top of that.
- Allow corn to cool, then pat dry. Flash freeze corn on the cob for 2 hours, then roll corn on the cob pieces in plastic wrap.
- Place wrapped corn in a freezer safe container, label and return to freezer.
How to freeze corn kernels?
- Remove the husks and silks from the corn. Using a sharp knife carefully cut the kernels from the cob.
- The corn will cut easily if you don’t cut too deep, into the cob.
- Place kernels in a pot. Add ¼ of water for every 2.5 cups of corn kernels.
- Cover and cook for 10 minutes over medium high heat, stirring every two minutes. After 10 minutes, remove lid and cook for an additional 3-5 minutes, to reduce some of the liquid.
- Once done cooking, spread onto baking sheet to cool, then place in a freezer container/bag, label and freeze.
How to freeze corn on the cob without blanching?
You can place corn, husk and all, straight into a freezer bag and freeze. Non-blanched corn tends to be mushy when defrosted though.

However, freezing after you process the corn saves a lot of freezer space and preserves the flavor, texture, and nutrients of the corn much better.
What if corn on the cob is missing kernels?
When kernels are missing it means the silk that was connected to it wasn’t pollinated and so it didn’t develop. You can either cut the part of the corn off or just ignore.

You can boil the frozen corn for 5 minutes, or until tender, or throw the corn straight on the grill and cook until ready.
How to cook frozen corn kernels?
Although I love making my cream cheese corn dish, sometimes I like to keep things simple by placing the corn kernels in a pot with a little water, boiling for 5 minutes or until they are tender.
Then I top with some salt and a little butter and enjoy!
