Using a sharp knife carefully cut the kernels from the cob. The corn will cut easily if you don’t cut too deep, into the cob.
Place kernels in a pot. Add ¼ of water for every 2.5 cups of corn kernels.
Cover and cook for 10 minutes over medium high heat, stirring every two minutes. After 10 minutes, remove lid and cook for an additional 3-5 minutes, to reduce some of the liquid.
Once done cooking, spread onto baking sheet to cool, then place in a freezer container/bag, label and freeze.
To use frozen kernels, heat frozen kernels in pot, over the stove in boiling water for 5 minutes. If using for baked goods, allow kernels to thaw then use in recipe as directed.
