Recently I’ve shared a few other cookies from cake mix recipes (Carrot Cake Cookies, Red Velvet Cookies, Red Velvet Crinkle Cookies, Grinch Cookies, and Soft Gingerbread Cookies) and I just couldn’t help myself- I had to share my absolute favorite cake mix cookie.

What Goes Into Lemon Cake Mix Cookies?
Lemon Boxed Cake Mix: Use any of your favorite cake mix brands, I tend to use Betty Crocker or Duncan Hines.
Lemons: Adding the juice and zest gives these cookies a little more tasty lemon flavor.
Eggs: Make sure to use large eggs.
Butter: I use Unsalted but Salted works too. You can substitute vegetable oil but the cookies will be more flat.
Powdered Sugar: This is a great, easy topping that bakes right onto the cookie, but you can also top it with a glaze (like what I use on my Gingerbread Bundt Cake), Cream Cheese Frosting, or Vanilla Buttercream.


How To Make Lemon Crinkle Cookies?

- Step 1: Add melted butter, cake mix, eggs, zest, and lemon juice in a bowl and mix until combined.

- Step 2: Roll each cookie in powdered sugar.

- Step 3: Place cookies on a parchment-lined baking sheet.

- Step 4: Bake for 9-11 minutes and enjoy!

Are these 3-2-1 Lemon Cookies?
No. 3-2-1 Cookies are where you combine 3 eggs, 2 packages of cake mix, whipped topping, and 1 cup of powdered sugar. And that resulted in very flat cookies.
So, I figured I’d remove the whipped topping and tweak a few more things with the recipe- and you know what? I love my version even more!
These cookies have just the right amount of lemony flavor, are so easy to make, and really are so delicious!

Easy Lemon Crinkle Cookies
Ingredients
- 1 box Lemon Cake Mix
- 2 eggs
- ⅓ cup butter melted or ⅓ cup vegetable oil
- 1-2 cups powdered sugar
Optional Ingredients
- Zest from 1 lemon
- Juice from 1 lemon
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, combine the lemon cake mix, eggs, melted butter, lemon zest, and lemon juice.1 box Lemon Cake Mix, 2 eggs, ⅓ cup butter, Zest from 1 lemon, Juice from 1 lemon
- Scoop out dough into balls and roll in powdered sugar.1-2 cups powdered sugar
- Place on prepared baking sheet.
- Bake for 9* minutes. Remove from oven and allow to cool.
Notes
- *If your cookies turn out flat, try increasing the bake time by 1-2 minutes.
- Flat cookies can also be a result of using oil instead of butter.
- Store cookies in an air-tight container and eat within 5-7 days.

Absolutely! I've made carrot cake cookies and red velvet cookies using those types of mixes and they turned out delicious!
