Ingredients
1tbsoil
1medium oniondiced- white or yellow
1red bell pepperdiced
3garlic clovesminced
2teaspoonpaprika
1teaspooncumin
1jar NY Lip-Smackin Garlic pasta sauce25 ounces
6large eggs
3ouncesfeta
Parsley to garnish
Instructions
Heat oil in a large sauté pan over medium high heat. Once hot add onion and bell pepper. Stir and cook until onions are soft and translucent- about 3-5 minutes.
1 tbs oil, 1 medium onion, 1 red bell pepper
Add garlic, paprika, and cumin, stir and cook for another 30 seconds to 1 minute, everything should be mixed together well.
Pour the pasta sauce into the pan, stir ,and bring to a simmer.
1 jar NY Lip-Smackin Garlic pasta sauce
Once simmering, gently crack eggs over the sauce and cover the pan with a lid. Cook until eggs are done to your liking, 5-12* minutes. Just make sure the egg whites are cooked through before consuming.
6 large eggs
Garnish with feta and chopped parsley.
