Cucumber Avocado Salad

This cucumber avocado salad is easy to make and perfect for summer! You will want to make this again and again!

Ingredients

  • 1 Cucumber
  • 4 Roma tomatoes
  • 3 avocados
  • ½ cup cilantro
  • ¼ -½ red onion*
  • 3 tbs lemon juice or juice from 1 lemon
  • ¼ cup Olive Oil
  • Salt
  • Pepper

Instructions

  1. Peel cucumber and chop into squares. Place in large bowl. (1 cucumber)
  2. Chop up tomatoes, avocados, cilantro and onion. Place in bowl. (4 Roma tomatoes, 3 avocados, ½ cup cilantro, ¼ cup- ½ cup red onion)
  3. Pour lemon juice and olive oil over it.
  4. Sprinkle with salt and pepper then stir.
  5. Enjoy!

Recipe Notes

Lisa’s Tips

* Red onion can be really strong so start with a ¼ cup chopped onion then add more if you want it.
*Refrigerate and store in an air tight container for 2-3 days. Avocado will start to brown after 2-3 days (even with the added lemon juice).
