Baku Moon Pies

These homemade moon pies are easy and delicious! A marshmallow center sandwiched between graham cracker cookies and dipped in chocolate- you’ll want to make these over and over again!

Ingredients

For the cookies:

  • 15 graham crackers crushed
  • 1 2/3 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2/3 cup brown sugar
  • 11 tbs butter softened
  • 11 tbs milk

For the filling:

  • 1.5 jars marshmallow cream 11 oz

For the chocolate coating:

  • 1 bag dark chocolate chips 20 oz
  • 3 tbs coconut oil

Instructions

To make the graham cracker cookies

  1. Preheat oven to 325°F and line a baking sheet with parchment paper
  2. Crush the graham crackers until they are grounded fine - use a food processor or just stick them all in a gallon Ziploc bag and crush them.
  3. Mix together the crushed graham crackers, flour, baking powder, baking soda, and brown sugar in a large bowl.
  4. Add in the butter and milk stirring until combined.
  5. Roll out the dough into a thin layer about 1/8 of an inch thick.
  6. Using a circular cookie cutter or a cup cut out circles from the dough and carefully transfer them to the parchment lined baking sheet. I like to use a spatula to move them and this helps the circles to stay circles.
  7. Bake for 10 minutes. They will start to smell like delicious graham cracker cookies by this time!
  8. Remove from the oven and let cool completely! Bake up the rest of the cookies.
  9. Once the cookies are cooled, put approximately ¼ cup of marshmallow fluff onto ½ of the baked cookies and refrigerate them. This allows the marshmallow fluff to set up. Refrigerate for at least 20 minutes.
  10. After refrigerating, top each mound of marshmallow fluff with another cookie, making a sandwich.

  11. Line another cookie sheet with parchment paper.

  12. Dip the entire cookie sandwich in the chocolate coating, using a spoon to spoon chocolate over the entire thing. Then place the cookie on the parchment lined baking sheet.

  13. Refrigerate the chocolate covered cookies to help the chocolate set up. Then cut away any chocolate that pooled around the cookies.

  14. Enjoy!

To make the chocolate coating

  1. In a microwave safe bowl add the chocolate chips and coconut oil.
  2. Heat in the microwave for 30 seconds, stir and then repeat until melted. This will take about 2 minutes in total. Around the 1 1/2 minute mark I start to check the chocolate every 10 seconds.
