Ingredients

  • 1 lb chicken breast boneless skinless (4 small chicken breasts or 2 large chicken breasts)
  • 1 tbs ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • 2 tbs olive oil

Instructions

  • Preheat smoker to 225°F.
  • Mix together seasoning in a small bowl.

  • Pat chicken breast dry with a paper towel.

  • Coat chicken breasts with olive oil, then coat with seasoning mixture.

  • Smoke chicken until an internal temperature of 165°F is reached, typically, 2-3 hours depending on the thickness of your chicken breasts. There is no need to flip the chicken as it smokes.

  • Once your chicken reaches 165°F, remove from smoker and allow to rest for 5 minutes before slicing to help retain the juices.

Tips and Tricks
  • The thickness of your chicken breasts will determine how long it takes to cook. 
  • If the chicken breasts are thin then it takes ~2hrs to smoke, thicker chicken breasts ~3 hrs.
